杂粮面包是面包以后很大的趋势,超市里面的杂粮面包一般都很贵。
这次我做的杂粮面包用了六种粮食:玉米面、小麦粉、糙米、黑米(我自己加的,果然
味道很清香)、黑麦粉、全麦粉。燕麦我家里当时没有,所以没加,现在有燕麦了,我可以有空再做一个杂粮面包。
需要方子的,我可以补充。
soaker
3 tablespoons coarse cornmeal
3 tablespoons rolled oats or wheat, buckwheat, or triticale flakes
2 tablespoons wheat bran

第五步 起火,喜欢用 chimney starter,塞两团纸即可。
第六步 没有smoker,就用经典的weber one touch gold 22.5寸代替,左边一滩水,右
边一滩煤球。一滩水的
作用防止肉过干,铝盘还能接住滴下来的油脂。
第七步 架肉在水盘上方,1-2块肉直接放上去即可,离火6寸多。肉多的,不要直接叠

普羅旺斯香料嫩煎雞 Poulet Sauté aux Herbes de Provence

4个半月,刚开始吃辅食,我昨天给的,一tablespoon, 按照给的instruction 配了
formula, 稀的奶没杀区别,一大半都漏了。 今天自己少放了奶调成了糊糊,胸喂完,
娃有点不够,就直接给了米糊,基本都吃下去了。
儿医给的Instruction,第一天吃一tablespoon(相当于3 teaspoons),第二天就吃2
tablespoons,第三天吃3 tablespoons, 第四天就吃4 tablespoons, 都是per serving
。这是不是也加的太快了呀,我看着一tablespoon就不少了,这4 tablespoon娃能吃下
去么?
另外什么时候给最好呢?我看网上有些说nurse完,有些说等一个小时,有些说两顿中
间,就有点晕了。

背景:家有11个月马上12个月的男宝宝一个。是我们的第一孩子,没有什么经验一直是
在摸着石头过河的状态中一步一步慢慢摸索到今天的。宝宝有一点早产36周就出来了,
出来的时候才6磅,体重只有7%。当时新爸新妈跟外婆很努力的在喂养孩子,幸亏妈妈
的奶水还不错足够宝宝吃。宝宝一路也长的挺好的,体重一直从7%长到54%六个月的时

一岁了只剩下20%还不到了。

肯定不是正宗的泰式pad thai
但是绝对是正宗的American pad thai!!!
干pad thai粉 温水泡上
蒜切碎,葱切段
胡萝卜切丝 绿豆芽洗净
鸡肉切丝
一个鸡蛋
鱼露 (我没有,就用 海鲜酱 蚝油 代替) 生抽 糖 辣椒酱
热油爆香蒜碎 煸炒鸡肉至变色
这时候粉应该已经半软了 控水放锅里煸炒至柔软又不失筋道的程度
(如果总是不够软 可以稍微加点水)
粉基本好了之后下面的动作就要快 以免粉煮过头
迅速按自己口味加入调料 拌匀 把粉拨到一边 放一个鸡蛋在锅里炒熟
然后放胡萝卜 豆芽 葱段
所有东西拌匀 出国
上面再撒一点花生碎就更好啦

Facebook之类的(请问我还要好自恋?!),每天打开电脑就看见朋友们的留言期待新
日记,去学校和Canterbury House遇到各国熟人,第一句话也是“你昨天更新的那个什
么XXX看着好好吃啊,今天又做了什么好东西啊”。昨天在Boston的弟弟又追问最近有
没有什么新菜式,他想死湘菜了。(看来我的确是太久没有更新关于湘菜的美食日记了
哈,要自我检讨!)另外,昨天半夜就差一秒准备关电脑睡觉了,娇姐一条信息过来咨
询更新事宜,我又不好意思的继续写了半个小时,完成了一篇recipe的中英文版。虽然
天天被催多多少少有点压力,不过真的是感谢大家给我的压力,我可不可以再次自恋的
认为这种压力是因为你们太爱我和我的美食日记而致的呢?哈哈哈,不能让信任我的朋

一直以来,我都没有敢于尝试这款不加酵母的面包,可能对不加酵母的面包有一种潜意
识的偏见:不发酵就做成的面包难显自身功力。可是,后来,我有一次在外面吃饭,是
一种自选的快餐,问我要什么,我看有corn bread的选项,就要了corn bread。因为我
好奇此款面包的味道,我从来没有吃过corn bread。
人就是这样: 没有尝试过的东西,总是对陌生东西充满莫名的好奇。也许你可以将此理
解为探险精神。今天做了一次corn bread,可能以后在外面吃饭,我不会点外面的corn
bread了,因为我做的味道比以前外面吃到的好太多。那就是纯正的自然的味道:玉米
粒、玉米粉。
味道特点:咸肉的味道又甜又咸,有点像国内的甜香肠。玉米粒的味道比单吃那种嫩玉
米棒好。我喜欢吃老玉米,所以这次经过烤制的嫩玉米比较象老玉米。
原料:coarse cornmeal 6 ounces buttermilk 16 ounces
以上原料提前一天混合好,室温下放一晚上。

配方来自Dorie Greenspan所著的【Desserts By Pierre Herme】,一本很棒的甜点书
。原配方中应该使用Raspberry,我没有,用的Blue Berry。家里的spring form pan也
坏了,所以拿Loaf Pan烤的。成品造型十分农家乐,大家凑合看看吧。
下面是书中的配方,括号内有本人唠叨的几句制作感想:
蛋糕体原料(以下配方可做10寸圆模蛋糕一个):
1. 1又3/4 Cup all-purpose flour。 (250ml的量杯)
2. 1又1/2 teaspoons double acting baking powder。(1teaspoon 5毫升。此处请注
意使用double acting的泡打粉,而非普通baking powder。double acting baking
powder在walmart就能买到)
3. 1 Cup sugar
4. 两只柠檬,削下最外层皮(不要削到白色部分的果皮),再将果皮细细切碎

培根170g

干百里香1/2 Teaspoon,用新鲜的会更香,不能省略

发面很容易啊,如果你有kitchen mix的话更容易,给个简易方子,
costco的大包酵母,
1, 活化酵母
1/2 cup 温水,30-35C, 1 tablespoon 酵母,1/2 tablespoon 糖,混合均匀,放置5
min,酵母活化之后,会起泡看起来差不多有1 cup,
2, 和面
4 cup all purpose 面粉,1/2 tablespoon 盐, 1/2 tablespoon baking powder倒入
kitchen mixer, 先开2档,混合半分钟,把活化的酵母慢慢加入,再慢慢加入 2 cup
温水,用mixer搅拌3-5分钟,看着面团表面光滑,差不多就和好了,
3,发面
放入烤箱,把灯打开,大概2-3个小时就发起来了,就可以做馒头了

男娃,6个半月。从周五晚上起,就频频醒来,闭着眼睛,又哭又闹的,都不知道到底
什么回事。
下面是我娃每日的喂养安排:
5~6AM 胸喂。如果是迷糊奶,大概吃11-12分钟,接着继续睡到7:45AM左右。如果醒了
,就只吃4-5分钟;
7:45-8AM 2 tablespoons 的米糊加一整个蛋黄,边吃边喝水;
11-11:30AM 180-200ml母乳;
12-12:30PM 大概1 tablespoon的辅食,偶尔给30ml果汁;
2:30 - 3:30PM 150-180ml母乳。基本依靠米糊奶,否则根本不吃;
4-5PM 给几块小饼干,或者1 tablespoon辅食;
7:45PM 2 tablespoon米糊,昨晚给加了点鱼肉。吃完米糊,大概再在迷糊中胸喂10-
12分钟母乳;
10:30PM 迷糊中胸喂7-8分钟母乳。
想多给点辅食,可人家吃了辅食,就一定影响下一个feeding,所以也不敢给多。娃这
哭闹,到底是咋回事呢?难道没吃饱?可现在喂母乳真是成问题,清醒的时候都不爱吃
,只能趁迷糊。可是常常吃着吃着就熟睡了,连弄都弄不醒啊。

记得上小学的时候俺妈去广东探亲,回来时带了几个菠萝,第一次闻到这么香的菠萝,
当时眼睛就睁大了,口水也流出来了。这么多年过去了,好象再也没有闻到过那熟悉的
香味了,最近在一本书上看到菠萝包三个字,还有那详细的做法,手不禁开始痒痒了。
好吧!不管成功与失败,总得先去尝试一下对吧!好在运气不错,没有特别失败,也就
算小小的成功了一把。宝贝闺女特爱吃,今天最后一个,边吃还边提醒俺:"妈妈,最
后一个菠萝包我吃了哈?"
做法复杂,强力不推荐,前后花去三小时。很悲催的是,这个方子里用的是罐头装的菠
萝,而且还只需要一勺,真不过瘾😄
